About LaRue Meat Processing

Our business story is really our family's story. We were farmers first, and we're still family-owned and operated.

At LaRue, we make products with craftsmanship you just don't find at large meat processing plants.

Way back in the 1950s there was a farm boy named Lou. He liked to do things that farm boys like to do — hunting, fishing, and above all farming. When he grew up he answered the call of his country, but after he was honorably discharged from the US Army he was happy to get back to his farm.

About ten miles away lived a farm girl named Ruby. She liked high heels and pretty dresses, but she was a really hard worker. One day, Ruby came to the attention of Lou’s (married) brother because he saw her pick up a hay bale in each hand and toss them simultaneously across a barn floor. Without telling Lou, Lou’s brother called Ruby up and said ”Hi Ruby, my name is Lou, and I would like to take you on a date.“ After some convincing she said yes. And after even more convincing Lou showed up at her house to take her out. It must have gone well, because they've been married for more than 50 years.

They put their hard work and their first names together and formed LaRue Dairy Farm and later LaRue Stock Farm. In the 1980s, they formed LaRue Meat Processing to process local animals from farmers in their area. Lou made smoked products including sausages, kielbasa, and hams. Eventually he also made tasty barbecued ribs and chicken and especially delicious roasted pigs and lambs for large groups. Lou won many awards for these and other smoked and cured products. But his best ever is his hand-made beef jerky made with a secret recipe beef jerky — a recipe he developed himself. Everywhere he went it won awards. Everyone who tried it wanted more. But Lou only had a little store out in the country, so we started this website to tell people about Lou and his products, especially his award-winning jerky.
